☀️ Summer Week #9: Still hot, but now we’re fighting back with forks instead of sweat…

Welcome to the first “not technically on fire” week of the summer! We’ve crossed the halfway point of hot-season hell and are now entering what I like to call: still hot, but survivable. The meals this week are all about that balance — refreshing when it needs to be, satisfying when it can be, and always leaning toward “I actually want to make this” instead of “guess I’m boiling my soul again.”

I’m not doing casseroles or long oven bakes in this weather. The food this week plays nicely with summer temps, avoids ingredient waste, and fits into my actual life schedule — including my weekly walk to Publix and babysitting shift with my mother.

🍴 Monday Dinner:

Steak Tacos with Cilantro Lime Rice
Stephen’s home, I’ve got a little energy, and this one is quick and satisfying without making the kitchen unbearable. A little lime, a little sizzle, and just enough leftovers to keep Saturday hopeful.

🍴 Tuesday Dinner:

Couscous Chicken Salad
Tuesday is a lot — mom duty, errands, groceries, and a gas station stop. So this cold salad is coming in as the hero of the day. I can prep it early and eat it while horizontal if necessary. Chill vibes only.

Cold, crunchy, and perfect for a Tuesday when I can’t be bothered.

🍴 Wednesday Dinner:

Savory Pork Salad with Ginger Rice
I’m walking to the store, so no heavy lifting allowed. This is one of those sneaky meals that tastes fancy but doesn’t make me want to cry. A little rice, some cold pork, and herbs that’ll get reused elsewhere. Done and done.

🍴 Thursday Dinner:

BBQ Muffins, Cream Cheese Pasta, and Corn Salad
Stephen’s home again and I’ll actually have help if I need it, because this one is a bit of a beast. Three components, each worth it, but also… why did I do this to myself?

🍴 Friday Dinner:

Tuna Macaroni Salad
Seafood. Friday. Non-negotiable. It’s cold, it’s filling, and it’s one of the few things Stephen doesn’t ask, “What is this supposed to be?” about. That’s a win in my book

🥖 Bread: Fantail Rolls

Planning to make these on Monday when I still have a glimmer of hope and energy. They’re pretty enough to impress, and they freeze well if I decide halfway through I made a mistake.

🍰 Dessert: TBD

Still choosing something better than the overpriced disappointment that was going to be that Orange Creamsicle Cheesecake. It’ll be seasonal, no-bake, and absolutely not requiring six ingredients that I’ll never use again.

🍿 Snack/Other: Peanut Butter M&M Blondies

Making these midweek because I know I’m going to need something sweet and easy. Candy + peanut butter = survival.

🌡 Weather Forecast:

Average: High 90s, Lows in the upper 70s
Translation: the oven is not my friend. If it takes more than 15 minutes to heat up, we’re not doing it. This week lives in the skillet, the fridge, and possibly the driveway if things really go off the rails.

📋 Summer Week #9 Game Plan:

This week’s dinners are doing exactly what they should: keeping me sane, cool, and far from the oven. Monday kicks things off with steak tacos — satisfying without being sweaty. Tuesday slides into a chill couscous salad that basically cooks itself (which is more than I can say for me after running errands all morning). By Wednesday, I’m channeling my inner “minimalist chef” with pork and ginger rice — it sounds impressive, but really it’s just smart laziness. Thursday? We’re going big with BBQ muffins, pasta, and corn salad — because if I’m going to lose it by the end of the week, I might as well do it with flair. And Friday wraps it all up with tuna macaroni salad: cold, creamy, and no one’s going to Hell. That’s a win. Saturday and Sunday? If it’s not leftovers or freezer magic, then it’s probably cereal and defiance.
