Sometimes dinner doesn’t go as planned — but if you’re us, you’ve got backup. The ground meat meal was originally scheduled for Wednesday, but Ricky’s family invited us to Disney for dinner. Obviously, we went — priorities.

That meant Thursday’s dinner was a pivot. Rather than make the baked sausage ziti from scratch again, we pulled two Million Dollar Pasta casseroles out of the freezer — prepped and labeled on May 14, 2025, just waiting for their big moment. Topped them with freshly grated Monterey Jack, and let the oven do the rest.

It’s the exact same flavor profile as the planned meal, just with a different layering and a pre-chilled attitude.

Dinner was low-effort, high reward. Pulling those casseroles out of the freezer mid-afternoon meant there was no rush and no stress. The cheese bubbled, the pasta was creamy, and the portions were just right.

This was a good reminder that freezer meals aren’t backup plans — they’re future-you looking out for present-you. Especially on a week where schedules shift and you’re balancing Disney dinners, family goodbyes, and keeping food from going to waste.

Oh — and Monterey Jack? Highly underrated in baked pasta. It melted like a dream.

This wasn’t the original plan — but the fridge, freezer, and a little foresight had our back. These casseroles were made over a month ago, labeled with loving Sharpie, and tucked away like little meal insurance policies.

Stephen didn’t even ask what was for dinner. The second the oven clicked on and the sausage started to reheat, he just said: “That smells like something good is happening.”

The cheese was grated straight from a Kraft block, dried on a paper towel (because we’re not animals), and melted perfectly over the top. Also, shout out to the Mickey plate — because why not eat cheesy pasta from the happiest dish on earth?

No salad. No sides. No stress. And zero complaints.
