- Main Dish
- Lunch out at San Jose’s Mexican Restaurant — Carol had the chimichanga with queso, Steve ordered the stuffed burrito.
- Side Dish
- Warm tortilla chips and fresh salsa that didn’t stand a chance. (A second basket may have mysteriously appeared.)
- Embedded
- Chicken soup at home — the quiet backup after the frozen pizza experiment flopped. Palermo’s Primo Thin Pepperoni just didn’t cut it.

🔍 About the Meal
Lunch was everything it needed to be: flavorful, filling, and satisfying enough to ruin dinner plans — in the best way. The chips came out warm (which should honestly be a law), the salsa was fresh, and both entrees were served piping hot and generously portioned. Steve’s stuffed burrito was loaded; my chimichanga was cheesy and crisp. We left happy and totally uninterested in cooking again that day.
Dinner was… fine. Steve made a frozen pizza, but I wasn’t into the brand. I ended up grabbing a bowl of chicken soup, which was exactly the quiet comfort I wanted. Dessert never made it out of the fridge — maybe Sunday.

I need to remember this brand of frozen pizza is a hard pass.
The cupcakes never got touched. Still in the fridge, looking hopeful.
If the chips are warm and the burrito is stuffed, dinner is optional.

We left San Jose’s full, relaxed, and convinced dinner wouldn’t be necessary. Steve’s effort to salvage the evening with a frozen pizza was sweet, but… no. A couple bites in, I quietly reheated some soup and let it be. It’s always the unplanned meal that ends up saving the night.
