🍽️ Summer #1, 2025 – Post-Week Wrap-Up

This week was a ride. We planned, we adjusted, we conquered. Family plans shuffled the deck midweek, but somehow it all came together — no meals wasted, no culinary meltdowns (unless you count the onion shell confusion). Spoiler: Stephen survived.
Let’s walk through what really happened…
How the Meals Played Out:
🍝 Monday – Meat Lovers Quiche
Planned? Yes
Made? Yes
Notes: “Baked to perfection and full of crispy, cheesy, bacon-y joy. Stephen had doubts — until he had seconds.”

🥗 Tuesday – Greek Orzo Chicken Salad
Planned? Yes
Made? Yes
Notes: “Light and punchy with feta, but note to self — cut the pasta in half next time. Stephen abandoned his bowl for pita chips. Valid.”

🔥 Wednesday – Gyu-Kaku
Planned? Roast Beef & Potato Salad
Made? Gyu-Kaku instead
Notes: “The kids’ movers were late, we got the call late, and we went full ‘Plan C.’ Stephen had never been, I had — and by dinner, grilling our own meat at the table felt oddly satisfying.”
🍝 Thursday – Baked Sausage Ziti
Planned? Wednesday
Made? Thursday
Notes: “Classic comfort. Stephen initially mistook the crispy onion topping for pasta shells, but once he knew they were for crunch, he was all in. Note to self: maybe label next time.”

🦐 Friday – Shrimp & Rice Casserole
Planned? Yes
Made? Yes
Notes: “Seafood Friday success. Rice got a little moody texture-wise, but flavors were great. Bonus: I managed not to over-season (Stephen-Approved™).”

🌮 Saturday – San Jose Mexican Restaurant
Planned? Lunch out with Barbara
Made? Yes
Notes: “Barbara’s second visit, our third. Food was solid, vibes were chill.”

🍝 Sunday – Freezer Pasta & Mushroom Risotto
Planned? Leftovers or freezer meal
Made? Yes
Notes: “Stephen made mushroom risotto. I pulled pasta with meat sauce from the freezer and boiled up fresh spaghetti. The combo worked. Also, dusty blinds at LongHorn made an unsolicited guest appearance.”

🧐 Lessons Learned This Week
- “Always have a backup — or better yet, a freezer stash.”
- “Crunchy toppings need proper introductions.”
- “Restaurant décor is part of the dining experience… apparently.”
- “You can still have a successful meal plan even if you pivot. Life happens.”
