Let’s just say this week had plans… and then this week had real life. We made some things. We skipped others. We pushed the seafood aside for frozen pizza. The bread got cut. The dessert got cut. The snack got demoted. And Steve, fresh on a mission to bring down his A1C, turned this into a culinary recalibration. So yeah. It was a week.
How the Meals Played Out:
🍴 Monday – Chicken Salad Sandwich & Pasta Salad
We kicked off the week with a bang thanks to the Vietnamese-Inspired Grilled Steak Noodle Bowls. This meal had everything going for it—fast prep, fantastic flavor, and a cold noodle base that made the Florida heat just a little more bearable. The steak was juicy and thinly sliced, served over soba noodles and topped with a tangy sauce, crushed peanuts, and fresh herbs. It was bold without being spicy and light enough to not feel heavy afterward. Honestly, it might be the most refreshing way to eat steak when it’s 90+ degrees outside.

🍴 Tuesday – Asian Pasta
This was hands-down the most photogenic plate of the week. Asian steak, pasta salad.

🍴 Wednesday – Greek Meatball Bowls
These were originally going to be Tuesday’s ground meat meal, but the week had other plans. The homemade meatballs and sumac salt made a midweek appearance and absolutely earned a gold star. Stephen loved it. I loved it. No notes.

🍴 Thursday – Frozen Pizza
Ah yes, the seafood meal that wasn’t. The kitchen said no. The freezer said yes. We ate DiGiorno Thin & Crispy Stuffed Crust and called it a patriotic pre-game. Honestly? It earned its place.

🍴 Friday – Independence Day
This was supposed to be a big pulled pork meal. Then reality checked in. Instead, we made hot dogs on the Griddler with all the Chicago-style toppings and tossed some frozen onion rings in the air fryer. And just like that, we created a new tradition: keep it simple, keep it delicious, and don’t fight with pork shoulder on a holiday.

🍝 Saturday – Mission BBQ in Clermont, FL
Lunch at Mission BBQ was the star of the day—pulled pork piled high, creamy coleslaw, and a bubbling side of mac and cheese that deserved its own round of applause. Steve grabbed a Boylan crème soda (because when you’re going comfort, you go full comfort). We brought some of the leftovers home, but let’s be honest, nothing beats that first bite in the restaurant when it’s still hot and fresh. Dinner? Eh. Steve threw together a hot dog and some onion rings, and I polished off the rest of my BBQ plate. No cooking, no cleanup, no complaints. Sometimes the best meals are the ones you didn’t have to lift a finger for.

🍝 Sunday – Chipotle
We had lunch with June and Rich at their place, and in a move of pure genius (or maybe just survival), we grabbed Chipotle on the way. I went with my usual—burrito bowl, light rice, heavy toppings. Lettuce, cheese, sour cream, the works. You know the drill. There’s something about scooping into that bowl while sitting at the dining room table surrounded by familiar walls and quiet chaos that just hits right. I didn’t even think about dinner until way later—and even then, it wasn’t a production. We wrapped up the week with a fridge dive, and that was that.

🧐 Lessons Learned This Week
Sometimes, even the best-laid meal plans get steamrolled by real life — and honestly, that’s okay. We learned that frozen pizza can save a Thursday, hot dogs make a pretty great stand-in for a holiday roast, and cheese sauce is more temperamental than a toddler skipping nap time. Also, attempting to balance meals for both flavor and blood sugar is a new reality in this house, and it’s going to take some fine-tuning. The lesson? Flexibility isn’t failure — it’s the whole point of having a plan in the first place.

Next weekAs we move into Summer Week 4, the game plan is to keep things just as flavorful but a bit more A1C-conscious. That means starches might start getting nudged aside more often — or at least reimagined — but you better believe we’re not sacrificing taste.
