Summer Week #4 – Meal Plan

☀️ Season Week 4: The Season Starts… to sweat through your clothes before noon
We’ve entered that glorious part of summer when the humidity has its own personality and even the mosquitoes seem to be running late from heat exhaustion. There are no special plans this week (shocking, I know), which means we actually might cook every night as planned. Unless of course the A/C quits, I quit, or Publix suddenly stops carrying bacon — in which case all bets are off.
📅 What’s on the Summer Week 4 Meal Plan:
🍴 Monday Dinner:
Italian Sandwich Roll-Ups + Classic Macaroni Salad
Prep it and forget it. These babies chill overnight and come out flavorful, creamy, and no actual cooking required beyond boiling pasta.
🍴 Tuesday Dinner:
Beef and Lime Rice Salad + Chili Lime Sweet Corn Salad
Bright, zesty, and surprisingly hearty. Rice and beef get dressed up with lime and veggies, while the corn salad adds a little creamy heat. I’ll serve Steve a smaller scoop of rice and sneak him more zucchini.
🍴 Wednesday Dinner:
Grilled Chicken Pitas with Lemon Rice Pilaf
Frozen grilled chicken cubes to the rescue. This one’s fast, fresh, and flavorful, and I don’t have to turn on a single oven.
🍴 Thursday Dinner:
Thai Beef Salad
Salad… but make it steak. Tossed with mint, lime, and just enough noodles to keep it interesting, this one comes together fast and tastes like effort without actually requiring any.
🍴 Friday Dinner:
Seafood Salad Supreme
Sweet shrimp, tender crab, and shell pasta tossed in a creamy lemon dressing that feels way fancier than the five minutes of effort it took. It’s cold, it’s refreshing, and it won’t heat up the kitchen — which is the true gold star of the week.

🥖 Bread: Dutch Crunch Bread Rolls
Crunchy on top, fluffy inside — it’s what every sandwich dreams of being served on.
🍰 Dessert: Strawberries with Sweet Ricotta Cream
Molasses meets cinnamon and they freeze beautifully. If I bake one at a time, it’s portion control. Technically.
🍿 Snack/Other: Gingerdoodle Cookies
Because a little spice and a little sweet makes everything better. Also, I wanted cookies.
🌡 Weather Forecast:
Average: 94°/76°
Translation: It’s hot. Don’t touch the oven. Hydrate, snack wisely, and cook things that won’t heat up the kitchen or your mood.
📋 Season Week #4 Game Plan:
- Monday: Use the prep time wisely. These roll-ups only get better with rest (just like me).
- Friday: Celebrate making it through the week with a chilled seafood dinner and maybe a smug little cookie.
- Weekend: Whatever’s left, lives again. We’re talking leftovers, snacks, or pulling something from the freezer. Absolutely no regrets.
