🔍 About the Meal
Remember that beautiful plan for Beef and Lime Rice Salad? Yeah, about that…
The ground beef — a hefty 2-pound vacuum-packed chunk from our quarter cow — was moved to the fridge on Monday, July 7 around 4:00 p.m. By Tuesday at 5:11 p.m., it was still solid. I mean permafrost solid. 🥶 Apparently, defrosting is just a suggestion to this meat. So the meal was moved to Wednesday.
On Wednesday, Steve pops up with: “Oh! HOA meeting at 6:00.” Well, okay then. He grabbed leftover Italian Pinwheels, I gave the beef side-eye, and reached for my safety net: one last frozen Million Dollar Pasta. That sucker earned its name tonight.
I preheated the oven to 350°F, wrapped the pasta in foil, and baked it for 35 minutes. Then I unwrapped it, added a mountain of shredded Cabot Vermont Sharp Cheddar, and baked it another 15 minutes until the top was bubbly and golden.
Crisis averted. ✨

📝 Wednesday Notes
Steve remembered the HOA meeting at 4:30 p.m. Dinner plan officially scrapped. Leftovers and freezer meals tag-teamed this one, and honestly? Not mad about it.

The ground beef is still camping out in the fridge. Maybe tomorrow it’ll be ready to show up for work. Meanwhile, I’m considering pre-labeling all future frozen meals with a sticky note that says: “Remember: I’m the real MVP.”
