🔍 About the Meal

This was originally just a ground meat and rice dish, but Summer 2025 called for something lighter, brighter, and less hot-kitchen-energy. So we served it over a crunchy bed of romaine, added a few fresh veggies, and hoped for the best.

The result? A taco bowl-adjacent salad that somehow produced five servings even though the math said two. The rice fluffed up like it had something to prove, and Steve demolished his bowl while I was still halfway through mine.

We skipped the green onions and tortilla chips this time — Steve vetoed one, I forgot the other. No one cried.

📝 Thursday Notes

Ground meat was frozen forever, so this got bumped from Tuesday to Thursday

We couldn’t find the cumin (it was literally right in front of us), so I used taco seasoning. It was… fine.

Steve said it was bland. I agreed.

Will mix salsa + sour cream into a dressing next time instead of dolloping them on top.

12oz of meat was too much — stick with 8oz

This made SO much food. Freeze the rest.

🎬 Behind the Scenes

  • Steve didn’t want chips but did eat every last bite.
  • The cumin is now visible on the spice shelf.
  • Lettuce base worked beautifully and I will definitely do it again — crisp and cool under the warm rice.
  • I ate slower, which meant I actually tasted it. Wild concept.
