☀️ Summer Week #3: Independence (and A1C) Reboot

So here’s the thing: I had a plan. And then Stephen’s blood sugar had some opinions. 🩺🎯 Which means this week’s menu took a little turn — no bread, no dessert, and not a cupcake in sight. But hey, it’s still summer, still flavorful, and still firmly grounded in that protein–starch–veg dream I started with. Just… tweaked.

Also, Friday is the 4th of July. So we’re skipping seafood (Catholic guilt, do not report me) and leaning into pork, deviled eggs, and freedom. ✌️🇺🇸

📅 What’s on the Summer Week #3 Meal Plan:

🍴 Monday Dinner:

Chicken Salad + Macaroni Salad
Served on a bed of romaine instead of bread because… well… A1C.

🍴 Tuesday Dinner:

Asian Pasta with Flank Steak
A fast and flavorful one-bowl wonder that lets the veggies shine.

🍴 Wednesday Dinner:

Greek Meatball Bowls
A little couscous, a lotta salad, and meatballs that might just convert a few skeptics.

🍴 Thursday Dinner:

Shrimp Salad Supreme + Israeli Couscous
Cool, crunchy, and lemony — everything July needs.

🍴 Friday Dinner (Holiday Edition!):

Independence Day BBQ Spread
Plain pulled pork, deviled eggs, and a serious lack of coleslaw (because Stephen said no).

🥖 Bread: Homemade French Bread

Bread was canceled due to poor compatibility with Steve’s pancreas.

🍰 Dessert: Key Lime Pie

Key Lime Pie got vetoed for the same reason. Sorry, lime lovers.

🍿 Snack/Other: Angel Food Cupcakes

We’ve got carrot chips and blackberries instead.

Translation: “If it requires the oven for longer than 20 minutes, it’s a no from me.”

📋 Season Week #3 Game Plan:

  • Monday: Start the week light and crunchy (and no, we’re not talking salad boredom — the chicken is marinated perfection).
  • Thursday: Pull that shrimp salad early, refrigerate, and let the AC fight the heat while dinner chills itself.
  • Friday: Break out the grill or slow cooker for pork — and don’t look back. Coleslaw is banned and dessert is nonexistent, but at least you’re festive.
  • Some weeks are extravagant. Some weeks are humble. This one? This one is strategic. Because sometimes love means feeding your husband deviled eggs instead of cupcakes.
