🥵 Summer 4 Wrap-Up: When the Freezer Fought Back and the Mac & Cheese Took Over
Some weeks you’re on top of your game. Other weeks your ground beef is still a meat brick, you get sideswiped by surprise HOA meetings, and your body decides to wave the white flag just as the weekend hits. But guess what? We still ate. Mostly.
How the Meals Played Out:
🍖 Monday – Deluxe Ham Casserole with Frozen Fries
Let’s start strong. This pork dish was planned and executed — just with a tiny pivot. I ditched the macaroni salad and went with air-fried frozen fries instead. It worked so well, it’s now canon.

🍔 Tuesday – Dinner Plan: Beef & Lime Rice Salad
Reality: The beef was still doing its best iceberg impression in the fridge. So we took a little drive and let Wendy’s handle it. Burger, fries, wrapper — no shame.

🍝 Wednesday – Million Dollar Pasta Saves the Day
Steve: “Oh, HOA meeting at 6:00.”
Me: blank stare into the abyss.
He finished the leftover Italian pinwheels from Monday while I nuked my emergency backup plan: Million Dollar Pasta from the freezer. I threw Cabot cheddar on top and called it dinner.

🌮 Thursday – Beef and Lime Rice Salad, Finally
It only took three days, but the beef thawed and the salad finally happened. Zesty, bright, and not a freezer item in sight.

🥩 Friday – Cast Iron Steak with Mashed Potatoes
Thai beef salad was the plan. But I looked at the pile of veggies, looked at my cast iron skillet, and made the only logical choice. Steak. Fast. With boxed mashed potatoes — which I zhuzhed up enough that Stephen didn’t complain once.

🛋️ Saturday – Sick Day and Solo Salads
I woke up feeling awful — nauseous and dizzy — so I stayed home while Steve and Barb lunched at Miller’s Ale House. He brought back food photos like a good Instagram husband. I had Campbell’s tomato soup and saltines for dinner. He finished his leftover salad.

🧀 Sunday – Kraft Mac & Cheese and Couch Recovery
Lunch with June & Rich, usually brought in, but sometimes at a sit-down restaurant.
Still sick, so we canceled lunch with my parents. I didn’t eat lunch at all. For dinner, I stirred together a box of Kraft Three Cheese Mac like a kitchen zombie. Steve ate something too — I don’t remember what, but he didn’t go hungry.

💡 Reflections from the Fridge
- Frozen beef should come with a warning label: Will not thaw on your timeline.
- HOA meetings are the enemy of homemade meals.
- Sometimes “cooking” means opening the box and letting the cheese powder work its magic.
- Fries are a side dish. Fries are always a side dish.

Hoping for a week with fewer freezer feuds and no unplanned illnesses. But let’s be honest — if the pasta’s in the freezer and the boxed potatoes are on the shelf, I’m ready for whatever Summer 5 throws at me.
