☀️ Summer Week 7: The Season Starts…
We’re heading into Week 7 with the kind of energy that says “I might meal plan, but I’m not about to sweat for it.” The forecast is hot, the schedule’s a bit wild (Stephen’s got a midweek Tampa trip), and you’ve got health goals on your mind — which means this lineup is all about balance: cool dishes, minimal stove time, and enough flavor to keep things from feeling like diet food. There are a lot of salads on deck this week, yes… but none of them are boring, and none of them are pretending to be rabbit food.
You’ve got some prep flexibility built in, and a backup stash of freezer rolls if things go sideways — because let’s be honest, life likes to do that. Here’s what we’re planning to make happen:

🍴 Monday Dinner:
Spicy Chicken Salad
This one’s all about the timing — quick enough to fit in around laundry, groceries, and whatever else Monday throws at me. The spice gives it just enough kick to feel interesting, and the build-a-bowl approach makes it easy to customize depending on what we are in the mood for. It’s salad, but like… with a backbone.

🍴 Tuesday Dinner:
Steak Fajita Pasta Salad
After a long morning sitting with my mother and the usual Tuesday errands, I will need something hearty but hands-off. This salad comes together easily ahead of time, so I can chill out while it chills in the fridge. The steak brings the main-dish energy, and the pasta makes it feel like comfort food without heating up the house.

🍴 Wednesday Dinner:
Burger Salad Bowl
I’m keeping it mostly stovetop today. This bacon-laced bowl is basically a deconstructed cheeseburger — perfect for when you want flavor, not fuss. The dressing has been adjusted to keep it A1C-friendly, and there may or may not be a plan to eat cupcakes for lunch. No judgment.

🍴 Thursday Dinner:
Pulled Pork Pasta Salad
This one’s going to slow cook in the background while we handle life. I’ll toss everything together later in the day for a pasta salad that feels like a Southern BBQ and a picnic had a low-carb baby. It’s satisfying, it’s make-ahead friendly, and it won’t ask too much of me — which is ideal because Thursday brain is a thing.
🍴 Friday Dinner:
Lemon Shrimp Rice Salad
Seafood Friday continues to do the Lord’s work — and this lemony, chilled salad is just what the forecast ordered. It’s light, refreshing, and easy to prep earlier in the day so I’m not cooking at dinnertime. Bonus: the citrus helps balance blood sugar spikes and makes the shrimp pop. No soggy seafood here, thank you very much.

🥖 Bread: Dill Cottage Cheese Rolls
We’ve still got some in the freezer, but if the mood hits (or you need a baking break), Thursday lunch might be the moment. They’re herby, tangy, and just weird enough to be interesting. No one is mad about these.

🍰 Dessert: Ribbon Pudding Pie
The plan is to knock this out early in the week so you can snack on it like royalty. It’s light, nostalgic, and completely justified because it’s got pudding in the name and ribbons in the vibe.
🧁 Snack/Other: Strawberry Milkshake Cupcakes
Baked midweek — maybe Wednesday if timing works out. These are your “I need something sweet but also kind of fun” snack. Whether they make it to dessert status or get eaten for lunch (again, no judgment), they’ll be there when you need them.

Average: 94°F / 77°F
Translation: I’ve accepted that we’re living in a Florida pressure cooker. Every recipe this week is either cold, stovetop, or slow-cooked, because the oven and I are not speaking. I refuse to sweat for a side dish.
📋 Season Week 7 Game Plan:
The meals are flexible, the extras are prepped or frozen, and the name of the game is “do what works.” Whether the plan goes perfectly or we skip a dinner to watch TV in our pajamas, we have options. And that’s exactly how summer should feel.
