🔍 About the Meal
This was originally scheduled for Wednesday… but Florida heat, freezer roulette, and a firm case of “I thought we had cucumbers and carrots” pushed it to Friday. By then, the meat was thawed, the marinade was made, and we were fully committed.
Let me be clear: we intended to top these lettuce wraps with cucumber and carrot for that cool crunch. We did not have either. So we skipped them. And guess what? Still delicious. Sometimes what a wrap really needs is steak, rice, and sauces. Everything else? Optional.

📝 Friday Notes
- This was supposed to be Wednesday’s dinner. It’s now Friday. Whatever.
- Grabbed cube steak from the freezer—wrong cut, but it worked beautifully.
- Did not have cucumber. Did not have carrot. Didn’t panic.
- Guac On! mini cup + crema = salvation
- I had enough food. Steve supplemented with leftover sub.
- Wraps were light, cool, and completely satisfying despite being a bit naked.
🎬 Behind the Scenes
- Used baking soda trick to tenderize the cube steak (I am basically a scientist now)
- Used prepackaged guacamole thinned with lime and water—zero effort, great flavor
- Didn’t open a can of chipotle peppers because I love myself
- Didn’t cry about missing veg because honestly, it was too hot to chew that much anyway
