🔍 About the Meal
This is one of those dishes that started out humble — a quick stir-fry tossed over spaghetti because I didn’t feel like being creative. That was Summer #3, way back in 2023. It was fine. Actually, it was good. And it became something we both looked forward to.
But this year? This year it leveled up hard.
We ditched the spaghetti for soba noodles, added brightness with lime juice and toasted sesame oil, then went full garnish-mode with chopped peanuts and cilantro. Suddenly this simple dish tastes like something you’d order at that “hidden gem” place with 8 tables and no website. It still comes together fast — but now it looks like you planned it.
And here’s the best part: even with all the flavor upgrades, it passed the new A1C standards without needing a single compromise. That’s right — this dish is officially Steve-safe and still Carol-approved.

📝 Tuesday Notes
This came together on a Tampa office day, which meant I had a window between sitting with my mom and Steve walking through the door to make it happen. I started by salting the steak and letting it rest on the counter for 45 minutes — worth it. The flavor was deeper, and it browned beautifully.
I bumped the meat up to 6 oz. to balance out the carbs (and make sure Steve didn’t get hungry an hour later), and honestly? I’d do it again. The soba held up great and made the bowl feel full without being heavy.
And the best part? Steve didn’t say a word while eating. That’s his version of a standing ovation.
🎬 Behind the Scenes
This one had me chasing green onions off the counter and discovering I was dangerously low on soy sauce, but somehow it all came together. I sautéed the ginger and garlic first, then the steak, followed by separate rounds of peppers and carrots — the extra pan shuffling was 100% worth it for texture.
While the noodles boiled, I got the garnishes ready: lime juice, sesame oil drizzle, crushed peanuts, and cilantro. I assembled everything while pretending I had a food stylist just off camera.
