🔍 About the Meal
We originally had Taco Casserole slotted for today, but let’s be honest — it’s July in Florida, and if you think I’m baking anything for 35 minutes, you’re clearly new here. So we pivoted to these Greek Meatball Bowls, and let me just say: Why didn’t I do this sooner?
They’re fresh, filling, and shockingly beautiful in the bowl. Juicy lamb meatballs meet buttery, lemon-kissed couscous, with a cold crunchy salad base, creamy tzatziki, and a citrusy sumac salt sprinkle that almost makes you forget it’s 94 degrees outside.

📝 Wednesday Notes
- Publix didn’t have sumac (shock), so I dried lemon zest and mixed it with flaky sea salt — 10/10 would do again.
- Used 78g romaine, 15g spinach, 17g butter lettuce for the base. Full 110g blend = actual salad.
- Tzatziki was very thick out of the fridge. Stirred in 2 tbsp whole milk — now it’s the new standard.
- Sodium is on the higher side, so we went lighter on added salt. Stephen didn’t complain, so we’ll call that a win.
🎬 Behind the Scenes
I took the meatballs and couscous out of the fridge around 6:00 p.m. so everything could come up to room temp before plating. No rush, no stress — just an easy build-your-bowl situation that felt oddly satisfying. Everything was prepped ahead, the tzatziki had been adjusted earlier in the day, and by 6:30 we were sitting down to bowls that looked like we’d picked them up from a fancy café. Definitely one of those meals that feels elevated without trying too hard.
