🔍 About the Meal
This sounded like it had potential: cool pasta, snappy shrimp, bright vinegar, and a crunchy cucumber salad. But in the end? Not even close.
The pasta-to-dressing ratio was wildly off, leaving us with a mountain of angel hair and not enough flavor to carry it. The shrimp, while properly cooked, needed more seasoning punch—and tossing them after the dressing left them tasting like an afterthought. And don’t get us started on the vinegar. Using only champagne vinegar meant it veered into “weirdly tangy” rather than bright and balanced.
The cucumber salad tried to save the day, but the chili oil brought too much heat for Steve, so even the side dish didn’t land.
File this one under: “we tried, we learned, we’re definitely not repeating this without some serious modifications.”

📝 Friday Notes
- This was supposed to be an easy, cool summer meal.
- Instead, it felt like punishment via pasta.
- Cut the vinegar by at least half next time, if there ever is a next time.
- Season the shrimp more aggressively and before they hit the pan.
- Cucumber salad needs way less chili oil—if it even gets a second chance.
🎬 Behind the Scenes
- The shrimp cooked beautifully—shame it didn’t help.
- Tried to use ghee instead of oil, which was a fun moment of “what’s going to come out of this jar?”
- No trip to Publix—just using what we had on hand. Apparently, not our best pantry day.
- Even the blog photo editing took more effort than the meal deserved. But hey, at least the blue Mickey plates looked cute.
