🔍 About the Meal

This dinner was equal parts “summer fresh” and “give me a fork and don’t talk to me.” We grilled a thick-cut steak to a perfect medium rare, let it rest like royalty, and sliced it thin over romaine with all the toppings: chopped bell peppers, green onions, red onions, and a drizzle of blue cheese dressing (for Steve) or vinaigrette (for me).

The smashed red potatoes? Boiled, flattened, and cooked in butter until they were golden brown and begging to be devoured. Technically they’re the side, but really they stole the show.

📝 Thursday Notes

  • Steve’s plate got the full creamy dressing treatment—mine stuck with vinaigrette and a little queso fresco.
  • The steak was cooked to 130°F and rested like a champ.
  • Skipped the marinade (the recipe lied to us), just salt, pepper, and grill marks.

🎬 Behind the Scenes

The steak hit the Griddler around 4:30 PM, and I was pacing like a contestant on Top Chef. Talia supervised from the floor (because of course she did). I had to dodge cords and rearrange cutting boards mid-photo shoot. And yes, I ate a bite off the cutting board while plating. No regrets.
