🔍 About the Meal

This was one of those meals that had promise — ham, cheese, couscous, what could go wrong? Turns out… quite a bit. I planned to make Couscous with Ham and Baby Peas, but realized too late that the peas didn’t exist. So I pivoted to a full cheese sauce version. It thickened up too fast, the couscous drank every drop like it was stranded in a desert, and the ham just kind of sat there looking embarrassed. Flavor? Meh. Texture? Dense. Would I make it again? Not unless I’m actively trying to sabotage someone’s night.

I started this at 5:55 PM and it should have worked. The cheese sauce was scaled and smooth. The couscous was fluffy. But once combined? Disaster. No peas. Too thick. It just didn’t eat well. Stephen ate it politely. I stared at it with resentment.

I did my mise en place. I followed the timeline. I adjusted the broth down. Still didn’t help. The cheese sauce thickened as soon as it hit the couscous, and I couldn’t thin it without making it taste watery. Next time I’m going with the original version — with peas blended and whole. They were more than garnish; they were structural.
